Florida’s Tastiest Weekend: Fish to Fork 2026 Brings Back Fan-Favorite Chefs & New Resort Upgrades

Top chefs will feel the heat when they compete at Fish to Fork, the beloved spring culinary event at Omni Amelia Island. It’s a great way to celebrate the completion of sweeping renovations at northeast Florida’s iconic destination resort.

Launched in 2014, the popular 4-day immersive showcase, scheduled for April 16-19, features a talented roster of chefs who’ve all previously participated in Fish to Fork.

Hometown hero Omni Amelia Island Executive Chef Omar Collazo will also compete, hoping to replicate his 2024 Individual and Team Challenge wins.

  • Chefs fish for their own ingredients during Friday’s five-hour sailing charters, setting the stage for Saturday’s fresh-catch culinary showdown.
  • Sustainability and creativity shine through special meals, from Omni Amelia Island’s showcase dinner to The Sprouting Project’s farm-focused lunch.
